Filipino Dessert: Biko

If you do not know already, I am half Filipino.  I was born in Cebu, Philippines, moved to the states when I was 3 years old, and have gone back to visit 3 times. Every time I go back I have to have biko. Biko is a Filipino dessert with a sticky, chewy and soft texture. It’s literally 3 ingredients minus the water and salt but we know they don’ count :).  If I can’t go back then I usually will ask my mom to make it for me.  But now as a grown adult, I’ve had to fend for myself. 😉 JK, love you mom! But since being on my own I have had these insatiable cravings for some delicious biko. So in an effort to be a self-sufficient adult, I called my mom for the recipe and made my own.  Her recipe is very similar to this one.

This recipe is great for potlucks and especially great for those crazy Filipino parties. If you have never been to a Filipino party and have the opportunity to go, never turn the invitation down. Its always a good time filled with great food and plenty of karaoke.

start with :: canvas (already painted on), white paint, painters tape (or washi tape), paintbrush


cover canvas with tape in herringbone pattern


paint over entire canvas with white paint (i used two coats)


after paint dries, peel away tape to reveal design

Strawberry Cream Cheese Danish


So I realized that I love cream cheese…with everything. Savory dishes, desserts, appetizers, breakfast…on a spoon? no? too gross?

Anyways, I love cream cheese danishes and their even better with strawberries.  It’s hard to find this delicious combo at bakeries so I set out on a mission to make my own strawberry cream cheese danishes.

Here’s how what I did and boy oh boy, it was so freakin good!



1 package of puff pastry dough (2 sheets)
1 – 8 oz package of cream cheese
1/3 cup plus 1 tablespoon of sugar
2 tbsp of greek yogurt
1 tsp of vanilla
1 egg yolk
1/2 tsp of lemon zest
1 tbsp of flour
8 heap tbsp of strawberry preserves
Turbinado sugar for sprinkling
an egg and some milk beat together for an egg wash

1. Mix the cream cheese, sugar, greek yogurt, egg, lemon zest, flour and vanilla in a bowl with an electric mixer and set aside


2. On a floured surface, unfold that pastry dough and roll out to make a 10 inch x 10 inch square


3. Cut the square into 4 smaller squares


4. Scoop 2 heaping tbsp of cream cheese mixture in the center of each square


5. Scoop 1 heaping tbsp of strawberry preserve on top of cream cheese mixer


6. Fold 2 opposing corners on top of each other over the strawberry cream cheese layers


7. Place on a parchment lined cookie sheet, brush each with egg wash, and sprinkle with turbinado sugar



8. Bake for 18-20 minutes at 400 degrees.

Chicken Spaghetti Casserole

One thing to know about me is that I am more of a baker than a cook.  For some reason (probably my insatiable sweet tooth), I would much rather spend my time in the kitchen measuring sugar, flour, butter, and chocolate chips than making dinner for my fiance.

However, in my effort to save our wallets from several nights of take-out, I wanted to start developing a little repertoire of easy go-to recipes and the first recipe that I attempted was this one that I found from one of my all-time favorite bloggers, The Pioneer Woman.  Ree Drummund lives the freakin dream.

The Pioneer Woman’s recipe is called Chicken Spaghetti.

I took this recipe and made it a little more simpler and girl-on-the-go friendly. Here is my version

10 oz of spaghetti
1 can of Creamy Chicken Soup
1 can of Cream of Mushroom Soup
1 cup of light sour cream
1 can of Rotel tomato and green chile
1/2 cup of Parmesean Cheese


The first thing I got going was the pasta. I cooked it according to the directions on the box.


I then took out a 9×13 pan and mixed the sour cream, cream of chicken soup, cream of mushroom soup, can of chicken, and rotel together all in the pan.

(I forgot to take a photo with the Rotel mixed in but essentially it looks the same but with tomatoes and green chile in the mix 🙂

Next I mixed in the cooked spaghetti in to the pan, then spread it out evenly.  I sprinkled the parmesan cheese all over and then stuck it in the over for 45 minutes.


I took it out and served it with a side of veggies and a piece of cheese Texas toast.
